I enjoy baking as is something I do as part of staying healthy just as I control the ingredients that go into every meal I cook. When I bake, I am able to control the quantity and quality of my ingredients.

When I don't bake, I shop where I can get good healthy products.

We only live once, therefore, having good health and maintaining it, is essential to having a happy long life. Healthy living is something we are able to promote by the decisions we make, be it the food we eat, what we drink, or clothes we wear to stay safe in whatever weather.

Other considerations being healthy relationships, first with our Maker, family and friends. Add to that, regular exercises indoor and outdoors.


#Apple Cake

Ingredients:

2 - 3 Jonagold apples

Dried fruits

Cinnamon, cumin, eggs, brown baking sugar, baking butter, salt to preserve and fresh lemon

To get the rich texture and natural sweetness, 50% of the mixture is made up of Jonagold apple, and 20% shop packed dried fruits.


Beat 4-5 eggs till frothy, depending on the size of cake

Mix butter and sugar together till soft and fluffy

[Measure out sugar depending on preference [I use less sugar as the apple and dried fruits provide natural sweetness]

Add a teaspoon and a half of baking powder to the flour[about a mug full of flour]

1/2 levelled teaspoon of cinnamon

1/4 teaspoon of cumin

Dice large Jonagold apples [for the above cakes 3 were used]. Squeeze half a lemon to the diced apple.

Mix into the diced apple 1/2 a mug of dried fruits.

Stir in a table spoon of self-raising flour to the diced apple/dried fruits to separate and soak up some of the juice.

A pinch of salt as a preserve

Mix the self-raising flour into the egg/butter/sugar mixture after adding baking powder, cinnamon and cumin to loose flour.

Create space in the mixture which should be a slightly thicker consistency than normal cake and then pour in the apple/dried fruits and gently stir in a folding movement.

Put the mixture into greased tin or tins and put in an oven that had been pre-heated at 200' for 20mins. Cook for 30 mins and turn the oven off while leaving the cake in the hot oven.

All ready to go with an appetising aroma that fills your home.
